Need new ideas -

  • Ok, I have chicken breasts in the fridge - tonight is my cooking night. Any ideas of what to make with them? (easy and fast, of course!)

    frozen veggies
    thai peanut sauce (or soy, or some other asian sauce)

    saute chicken w/soy or peanut or whatever sauce in a pan (saute = warm up on a pan with some pam and toss in some flavor with a sauce!)
    at the same time -
    boil noodles, toss in the veggies at the end for about 4 minutes before the noodles finish
    strain it all! throw back in pot, dump in sauce and chicken and WALA! dinner is served!

  • One of my favorite super-quick chicken dishes is a chicken/pasta/pesto combination. You can have it all ready in about 15 to 20 minutes. I always keep a container of pesto in the fridge -- homemade is great, but the fresh-supermarket kind works just fine, too...

    4 chicken breasts
    1 medium sweet onion, diced
    2 cloves of garlic, minced (or use 2 teaspoons already-minced garlic from the market)
    6 to 8 tablespoons of fresh pesto sauce
    1 pound pasta (any kind, but I like using bowties here)
    salt
    black pepper
    water
    olive oil
    1 bottle of very dry white wine


    Pour a glass of wine. Set aside.

    Cut the chicken breasts into bite-size pieces, rinse them under cool water, pat them dry.

    Drizzle the chicken breasts with a couple tablespoons of lemon juice. Add two tablespoons of pesto and stir to coat. Set aside.

    Take a sip of the wine.

    Fill a pot with water, add some salt, set it to boil. When it's boiling, add the pasta and cook until al-dente (firm to the bite). Do not drain!

    While the pasta is cooking, heat a large skillet over medium-high heat. Add two tablespoons of olive oil. When the oil starts to shimmer, add the onion, and cook until the onion becomes translucent -- about 4 minutes. Add the minced garlic, and cook until the garlic turns slightly golden -- about 2 more minutes.

    Take a couple more sips of wine.

    Add the chicken and cook, stirring every once in a while, until the chicken is cooked through and no longer pink.

    Add the remaining 4 to 6 tablespoons of Pesto. Stir well.

    The pasta should be done by now. Using a huge slotted spoon, scoop the pasta out of the water and put it directly into the pan with the chicken and pesto sauce. Stir to coat all the pasta with the sauce -- if there doesn't seem to be enough sauce, add a few tablespoons of the cooking water from the pasta (it won't be dripping with sauce, but everything should be nicely and evently coated).

    Finish the glass of wine. Pour another.

    Serve hot with grated parmesan cheese and the rest of the dry white wine!

  • Bake it in the oven covered in tin foil (you can even go crazy and put a little OJ in the pan). Cut it up into cubes, combine with cut grapes and walnuts, toss with mayo and put it on a salad. The kids love finding the nuts and grapes and it's delicious.

  • I made a quick and easy dinner last night and thought I would share. Fritattas (spelling?) are really fast. I just sauted garlic, onion, basil, ham, and tomatoes in a pan. You beat some eggs and pour them over everything in the pan. Let the eggs set, throw on some cheese, and bake or broil around 5 minutes. You could serve it with toast or bread etc. I like it because it is a one dish meal and you can play around with the ingredients. You could do tons of veggies or all meat. It was ready in under 30 minutes.

  • We do these for brunch sometimes -- yum! I can see how it would make a good dinner, too!
