super easy soup recipe

  • I found a recipe for soup the other night and modified it to make it easier.

    5 cups of vegetable stock (or chicken stock)
    1 can of navy beans
    6 oz of Any kind of pasta
    2 cloves of garlic
    4 tbsp of olive oil
    salt
    pepper
    chopped fresh parsley (however much you want)

    Put the vegetable stock in a pot and add half the beans and bring to a boil. Blend up the other half of the beans. Add the blended beans. While heating the soup I chopped the garlic and parsley. Once the whole thing is boiling, add the pasta. Cook pasta till tender. Sautee garlic in the olive oil until golden. Add garlic and olive oil to soup. Salt and pepper to taste. Add the parsley, stir it up and eat! We had ours with a crusty multi grain bread. Yum!

    This recipe made two large bowls, so I would recommend doubling or tripling it for a larger family. Hope you like it as much as we did!

  • I love using the pre-made soup bases combined with chicken stock. The butternut squash is my favorite (though the potato-leek is pretty good, too). I sautee onions in the soup pot, mix a box of soup base with chicken or vegetable stock, then chuck in whatever vegetable/bean combo sounds good that night (usually has a couple kinds of beans, potatoes, carrots, broccoli, cauliflower, celery...) and boil until the veggies are soft (I guess I usually put the beans in last). Season with salt and pepper. It's even better the next day!

  • What kind of pre-made soup bases do you use...I don't know of any except boulijan (sp?) cubes. I just read the ingredients and found out they have msg. We didn't eat much soup growing up so I was just wondering if you knew of any. I am going to have to use your idea about the different veggie/bean combos!

  • You can get boxes of pre-made soup bases. You can eat them alone as the soups that they are (butternut squash, potato-leek, tomato, etc) or use them to start your own soup. It's a fairly cheap way to start with a lot of nice flavor but only have the cook-time be about what it takes to boil potatoes. You can just chuck stuff in and let it go for a while. Usually, when we make soup this way, we have LOTS of leftovers. It actually freezes pretty well, too.

    I find the soup bases in the soup section of the natural foods aisle in my Save-Mart.
