Quick and Easy Ham & Potato Soup

  • I ready this in the Rachael Ray Every Day cook Book and I have to say is YUMMY!!!!!
    I doubled the recipe
    yellow potatoes ( boil ahead, I left the skins on) I used 3 lbs ( diced)
    ****Note*** Don not put all of the potatoes in the pot you have to puree some)
    2 containers of chicken stock

    1 onion
    1 table spoon butter
    2 cups zuchini
    a dash of nutmeg (use sparingly)
    a dash of dill
    a dash of salt to taste
    a dash of pepper to taste
    Ham orTurkey Ham Cubed ( I used turkey ham) and I used a small turkey ham and diced it so you know how much you and your family like


    In pan sautee onions and butter, I added the ham at the end to warm it
    In pot add 1 container of chicken stock, potatoes, oinions and ham
    Bring to boil.

    Puree Mixture: add 1/2 container of chicken stock, potatoes, zuchini, in Blender. Add to mixture to pot of soup. Let simmer!

  • I might have to try this - my daughter is not into potatoes, but I am thinking since this is pureed, it might go over.
