Thanksgiving menu

  • If you're cooking for Thanksgiving, please share an interesting dish you're making - perhaps for those of us who are still not sure re the menu :) this can be nice inspiration!

  • My husband is on a sweet potato kick, so one of our dishes is Indian-spiced sweet-potato fries with a yogurt dipping sauce. Very yum!

  • I'm making baked tofu. It's really easy. It is extra firm tofu cut into strips. You pour enough olive oil in a pyrex dish to cover the bottom and put the strips in. Then you sprinkle on the juice of one lemon and some tamari or soy sauce and some spike. Bake at 350 for about 15-20 minutes. It's yummy as a little side dish to whatever else you are having.

    this is one of two stuffings this year. I'll do an typical bread and seasoning stuffing w/ onions, mushrooms, celery, etc. This link goes to an incredibly delicious and decadent stuffing and you can make it with vegetable broth instead of chicken. Ohhhhh, I can't wait!

  • This is actually the first time in a few years that I'll be cooking Thanksgiving dinner, and I have a family where no one likes turkey. I'll be marinating a cut-up whole chicken in a garlic/lemon/herb marinade and baking it (I got some extra split chicken breasts too - we're a white-meat crowd, mostly). I do a fairly simple bread stuffing with celery, onion, and carrots in the crock pot - I guess that technically makes it "dressing," not "stuffing," though. And no potatoes - my Southern background considers mac & cheese as a "vegetable," so we'll be having that, along with the famous (infamous?) green-bean casserole and a salad. And the kids are eagerly awaiting pumpkin pie.

  • I am cooking for 24 family and friends

    a 20lb turkey baked overnight...........butter, salt pepper, poultry seasoning
    ham.....baked in ginger ale cloves, pineapple, cherries
    venision roast...........baked in a boiling bag....onion soup mix
    baked sweet potatoes w/butter, and pecans, a little splenda brown sugar not much at all
    green beans I froze...........pieces of ham oand pepper cooked in crock pot
    fresh cranberry relish....cooked cranberries, tangerines, pecans, cherry jello
    mashed potatoes
    gravy....from the drippings of the turkey
    stuffing.......day old bread......broth from the turkey.....pieces of turkey the neck meat and inners.....2 eggs...poultry seasoning, salt, pepper to taste bake
    corn on the cob that I froze
    homemade bread...........from my bread machine
    1 apple crumb pie
    1 pumpkin pie
    and peaches & strawberries that I froze
    coffee
    tea
    cranberry bilinis ..... diet cranberry sierra mist , a bottle of asti, and a few cranberries for the decoration

    Each will take a dish home with them and there is always room for one more at my table.
    And I am Thankful for the fact that I can get it all done and everyone is happy, full and

  • Venison roast! My mouth is watering... that sounds soooo good.

    Our menu keeps expanding... right now, we're at:

    turkey (brined in an apple-cider spice brine)
    gravy made from the drippings, with plenty of sage
    stuffing -- two versions, one gluten-free and one regular
    homemade cranberry relish
    jelled cranberry stuff that my father-in-law adores
    ham with a bourbon-ginger-brown sugar crust
    cheeses for people to nibble on while I ignore them picking at the ham
    Indian-spiced sweet potato fries (see above)
    candied yams with glops of marshmallows so my kids are all sugared up
    A dairy-free version of the sugary candied yams
    sauteed green beans
    spiced rice
    maple-glazed carrots
    old-fashioned bacon-laced collard greens
    pumpkin pie that my sister-in-law can't live without
    sweet-potato pie that my husband can't live without
    a gluten- and dairy-free version of sweet potato pie
    apple crisp that I can't live without
    my mother-in-law's practically illegal it's so good rum cake
    gluten- and dairy-free cake
    apple cider
    macaroni and cheese that my 3-year-old will ask for at the last minute
    something with plenty of alcohol in it, for me.
