Anyone baking cookies?

  • This is going to sound terrible, but my favorite cookie recipe is the one printed on the underside of the lid of the Quaker Traditional Oats box, only with pecans added. I can eat the whole batch!

  • That's not terrible at all! My youngset brother makes me make that very same recipe for him -- extra raisins, please -- every single freaking year. When he lived with me (for about 3 months after he graduated from college -- long story) I ended up making them practically weekly!

    I love makiing lemon squares; they're easy, quick, take nearly no effort, and look (and taste) great:

    Lemon Squares

    For the shortbread:

    1 cup all-purpose flour
    1/2 cup (1 stick) unsalted butter
    1/4 cup white sugar

    For the topping:
    2 eggs, beaten
    3 Tablespoons lemon juice
    1/2 teaspoon lemon rind
    1/4 teaspoon salt
    2 Tablespoons all-purpose flour
    1/2 teaspoon baking powder (NOT SODA)
    1 cup white sugar

    Blend the ingredients for the short bread together until you have a crumbly dough. Press the dough into a 7 by 11-1/2 by 1-1/2 inch pan (pyrex is fine). Prick all over with a fork. Bake at 325 degrees for 25 minutes, or until slightly golden.

    While the shortbread is baking, mix together in a bowl the 1 cup of white sugar, eggs, lemon juice, lemon rind, salt, 2 tablespoons flour, and the baking powder (DO NOT USE BAKING SODA!). It will be pale yellow and frothy. Pour it over the hot shortbread, then bake an additional 25 minutes, or until just browned at the edges.

    Cool in the pan, cut into squares, dust with powdered sugar if you like, but, really, they taste just fine without.

  • They do have a TON of recipes at northpole.com. Somehow, it became my family's responsibility to make the cut out Christmas cookies every year, and now that my kids are older than my brothers, we do it with our girls. I'll post the recipe tomorrow.

  • I went to the store and a little old lady told me to add a box of instant vanilla pudding to each cooking receipe and that is will make them a soft as the soft batch cookies in the cookie isle. She also said that if you double the batch use 3 boxes of instant pudding.

  • My friend and I bake cookies this year to hand out as gifts to friends and business. We had so much fun that we plan on doing it every year. We made four diffrent kinds and a total of 520 cookies.
