Avocado recipe?

I'd like to make something with avocados but not sure what. Any easy and quick ideas? We have some people coming over tonight who are vegetarian and don't eat sea food -- I've made avocado stuffed with shrimp before, but this won't work tonight.Flag as inappropriate Posted by Nataly on 12th January 2008

When I lived in Mexico, my host family would make vegetable soup and would have cubes of avocado on the side that you dropped into your soup right before you ate it. This was one of my favorite dishes. I think this would work with almost any kind of vegetable soup (the one that they used it with was a little spicy and a little tangy).
The only other things I know to do with Avocado are to mix them in with a tangy vinaigrette, make guacamole, or have them sliced on sandwiches. I don't know if any of those are fancy enough for your purposes. Avocado stuffed shrimp sounds just decadent (even though I don't eat shrimp). My favorite is Guac...and some chips.
I love to eat rice and beans and slice avocado on the side with a nice salad.
I am a latin and I L_O_V_E my rice and beans.
Do you like that?
I see you already found a recipe. My son eats Avocado sandwishes all the time and now my daughter eats an avocado for lunch. We love them around here.

I make brown rice and pigeon peas.
I cheat because my mom makes the seasoning for me and I feeze it in trays. The seasoning is called Sofrito. I believe goya makes it too but I hear "not that good".
I will get the low down from mom on how to make the sofrito and then post the recipe. I should know myself by now. She spoils me me with that stuff.
We also make Kidney beans with with rice. DELICIOSO .

Yum yum. I love avocado. I'm a big believer in not using too many other ingredients in combination with avocado. I think it overwhelms that subtle flavor, and also distracts from the exquisite (I don't think I'm over-exaggerating) smooth texture. Ugh. Guac and tortilla chips. Heaven. Here's another idea - mashed on toast and with a little honey drizzled over it.
