Tonight we realized that we reeaally need to shop for groceries...soon! Yet my husband and I whipped up a surprisingly good Indian meal using just canned/dried stuff that we'd had for ages:
Curry rice: just ordinary white rice steamed with a spoonful of Madras curry powder to add a little flavor and color.
Palak paneer: we had a can of it that we'd gotten at World Market.
Chickpea curry: sautee some onions and garlic, add a T or 2T of curry powder, add a can of chickpeas and a can of diced fire-roasted tomatoes with juice. Simmer for about ten minutes, covered.
