I'm a new Mom trying to juggle working at home and having a young baby. In the past year and a half I have gotten married, graduated college, and had a baby. I am trying to build up a business as a spanish/english translator. My husband is a teacher...so we get by, but we could always use more money. I also want to continue to keep my skills sharp, because I know I'm not going to want to stay home forever. I'm interested in making friends and networking with other inspired mamas!

Ok ladies, I know we can all use a few really simple recipes.
Here's my contribution.
Crispy Potatoes
Cut enough potatoes (any kind) in half lengthwise to fill a pyrex dish. in the pyrex dish cover the bottom with olive oil, salt and pepper. Put the potatoes in cut side down. Bake at 375 for 45 minutes to an hour (until the cut side looks brown and crispy). Top your potatoes with anything that you would put on a baked potato. In our family we cut them open and put butter, cottage cheese, salsa, and corn on them. We usually also have steamed broccoli with them. mmmm goood!

I am the very proud mother of a too-cute-for-words one year old son! My job has me commuting an hour each way, but I do work from home one day a week and get to see hubby and son as soon as they get home! My hubby takes our son to/from the onsite daycare where he works and is able to spend an hour or two bonding (i.e. wrestling)before i get home! :)

i am all about quick meals! one of my favorites is 'stirfry'
1 bag of mixed veggies (whatever you like!) microwave steamed (slightly underdone - 3 min?)
In a huge pot on the stove - heat a little oil
saute some meat if you are eating it (or left overs) (i dont do this LOL)
toss in some left over rice or noodles (or make some!) and 'fry' it for a bit (1 min?)
add veggies to pot
add soy sauce until it turns brown (taste occasionally to make sure you have enough and dont over do it!
fry an egg if you want to get fancy and add that to the mixture!
plate it up!
at my grocery store they also have this bagged version of broccoli slaw with out the dressing which is awesome! soemtimes i just add that to the rice or noodles instead of veggies and you dont have to steam them.
can also use a peanut sauce or really any sauce instead of the soy sauce
i probably do this at least twice a week because it litterally takes 15 minutes or less!

Super Nachos!
1. Cook package of ground turkey, add taco seasoning and a can of diced tomatoes with green chiles
2. Heat up one can of "pinquitos" beans and one can of veg refried beans
3. shred cabbage/salad
4. cut up tomatoes, avocado, and green onion
5. serve with shredded cheese, salsa, sour cream, and either chips or corn tortillas
Fast and Yummy!

Chicken pot pie! This is a new one for me. My sister in law brought it over for dinner, and I looked at it and said, I can make that!!
2 frozen pie crusts
1 bag frozen mixed veggies
boneless chicken, boiled and chopped (i did 2 breasts last time and that was perfect for my family)
1 can cream of chicken soup
Boil chicken until cooked and chop into bite size pieces. Or chop then boil. Throw in the mixed veggies for the last minute or 2. drain. mix veggies, chicken, and cream of mushroom soup. Put ingredients in pie crust, and cover with other crust. Then i cooked according to the pie crust instructions for temperature, and cooked until the top one sort of browned (maybe a half hour)?

I am an overworked agency account person living in Cincinnati Oh. My hubby and I just moved here last year and are trying to figure out how to meet new people when you're married with kids! Speaking of, I am also mom to a very charming and head-strong little boy!

Roasted veggie/chicken pasta
Turn the oven on 350.
Toss cherry tomatoes, zucchini, squash, and onion in olive oil, salt & pepper on a baking sheet.
Toss 2-3 chicken breasts (depending on how many you need to feed) in olive oil, salt & pepper.
Roast veggies and chicken in oven for about 45 minutes.
Toss with pasta and sprinkle with parmesan cheese.
Even though it takes a little while, it is very low-interaction! I usually prep everything the night before and throw it in the oven when I get home, then it's ready by the time we're ready to eat.

My full-time position is medical editor, but with having to get up every morning at 3:30 and go all day until 10:00 at night, I am burned out of the whole thing!! My passion is jewelry design for children. I just started my company, Sassibella, and am hoping to turn this into a full-time venture. My 10-year-old daughter acts as my sounding board, as she has her finger on the pulse of all that is hip and cool! I absolutely love this gig. Now, if I could only get some customers...;)

Fajita chicken salad...
I buy that Tyson fajita chicken - it's preseasoned and precooked and delicious! Just heat it up and then add your favorite greens, some cherry or grape tomatoes, cucumber slices, sweet red onions and favorite cheese(s) and top it with your favorite dressing. It's quick, and easy, and a way to get my kids to eat veggies. They will eat any veggie that has ranch dressing on it! I even use baby spinach leaves for extra nutrition and my kids eat it right down.
