I just made up this recipe from stuff we had in the house over the weekend...It was a big hit with the guys working out in the yard.

2 lb. of cork screw pasta
1/2 cup EV Olive Oil
1-1.5 tsp of thyme
1/2 tsp garlic powder
Salt and pepper to taste
Parmesan cheese to taste
1 can diced tomatoes
1 can chick peas
Whatever kinds of veggies you have on hand (I used a bunch of french beans)

Cook the Pasta. While it's cooking heat the olive oil and add the thyme. When you can smell the thyme, remove the olive oil from the heat. Add the other seasonings to the olive oil and stir it up. Cool the pasta, and then add it to a large bowl with the tomatoes and chick peas and vegetables. Dress the pasta and veggies with the seasoning mixture, and add the Parmesan. Stir it all up and enjoy.

Here is my all time favorite pasta salad, I make this at least once a week in the spring and summer!
1 3/4 cups farfalle pasta or your fave pasta
1/2 cup mayonnaise
1/2 cup sour cream
2 tablespoons cider vinegar
1 1/2 tablespoons prepared Dijon-style mustard
1 teaspoon white sugar
1/2 teaspoon ground black pepper
1/4 teaspoon dill weed
2 cups seedless green grapes, halved
2 cups diced ham or shrimp
1/2 cup chopped green onions
1 1/2 cups diced sharp Cheddar cheese

Cook pasta in a large pot of boiling water until al dente. Drain, and rinse in cold water.
In a small bowl, mix together mayonnaise, sour cream, cider vinegar, mustard, sugar, black pepper, and dill weed.
In a large bowl, combine pasta, grapes, ham, green onions, and cheese. Toss with dressing. I like to make it the night before and let it chill overnight. enjoy!
