I'm a new Mom trying to juggle working at home and having a young baby. In the past year and a half I have gotten married, graduated college, and had a baby. I am trying to build up a business as a spanish/english translator. My husband is a teacher...so we get by, but we could always use more money. I also want to continue to keep my skills sharp, because I know I'm not going to want to stay home forever. I'm interested in making friends and networking with other inspired mamas!

Okay, so I know that boxed dinners are not always the most nutritious thing, but there are some nights when I'm just too tired to cook anything. Those are the nights when we have the vegetarian spring rolls for dinner from Ling Ling, or a frozen pizza, or whatever. I was wondering if anyone wanted to share a product that their family just LOVES, because I could definitely stand to broaden my horizons...Any suggestions?

I love the mac and cheese from Country Crock that is in the resuseable container and you only have to portion out and heat up. Their mashed potatoes are really good, and actually come lumpy (our favorite kind).

we used to love taquitoes. And I used to keep a lasagne in the freezer for the days when I just couldn't bear the thought of cooking. Lately I've been saving frozen soup for those days. When you're only feeding 2 plus a fraction, it's very easy to have leftovers from just about any soup recipe. Plop the soup into a glass container and into the micro. Slice some bread and some oranges. Done!
For slightly more work, I either make scrambled eggs or tortilla pizzas. For our tortilla pizzas I turn on the oven to broil and place 3 flour tortillas on a baking tray and into the oven while it heats up to add a little bit of crisp to them. Open a can of refried beans, take out the tortillias, spread with beans and shredded cheese and back in the broiler until done. Slice with a pizza cutter and serve with salsa, guac, and sour cream. Cheap and easy and the whole family gobbles them up!

I love those frozen past dinners. If you have a Trader Joe's in your area, they have great ones, or the Bertelli's (sp?) at the regular grocery store.

I try to stay fit and enjoy running and pretty much anything that gets my heart pumping. I love to cook and bake. Like to put most anything on the grill. My idea of good tv usually involves spacecraft or mutants.

I try to keep frozen vegis and pasta on hand at all times. I boil them together in a big pot and toss with parmesean cheese for a quick meal.

Frozen cheese ravioli, when everyone could still eat gluten. Now, though, it's rice pasta, and we almost always have a container of homemade sauce in the freezer...

Easy and a winner with the kids:
2 - 3 cups pre-cooked chicken (I often buy the pre-roasted at the grocery store if I want a really easy prep)
1 bag broccoli - thawed
1 can cream of chicken soup
1 1/2 cup shredded cheddar
Mix all of the above together, put in baking dish.
Top with stuffing (2 cups Stove Top mixed with 1 cup water)
Bake at 375 for 30 - 45 minutes
I keep these ingredients on hand so its really easy to throw together last minute and veryone loves it.
