When the kids are up, the favorite minimal-fuss meal is what our oldest boy calls "Snacky Dinner." Basically, it's a bunch of appetizers -- fresh spring rolls (rice paper is gluten free, wonton skins are not), sliced cheese, rice crackers, cut-up veggies with dressing for dip, hummus, sliced cold meats -- spread out on the table, and they graze and eat whatever they like.
