Tonight was one of those nights where I was literally ready to collapse and fall asleep after we'd put our daughter to sleep. There was NO WAY I was cooking anything for dinner so my husband kindly offered to make quick omelets with veggies and cheese and have some crackers and wine. This involved some cooking, but as long as it wasn't cooking by me I was fine.

And it got me thinking -- what are some of your favorite no-cook meals? I need new ideas because while I always cook for our daughter (a few times a week, and then left overs), we have many nights like tonight.

For us, especially when the weather is nice, it's summer sausage, a couple of good cheeses, crackers, sliced fruit (usually tart apples, because they go so well with cheese), crudite, and wine. We just make a big plate, set it between us, and snack until we're full...

When the kids are up, the favorite minimal-fuss meal is what our oldest boy calls "Snacky Dinner." Basically, it's a bunch of appetizers -- fresh spring rolls (rice paper is gluten free, wonton skins are not), sliced cheese, rice crackers, cut-up veggies with dressing for dip, hummus, sliced cold meats -- spread out on the table, and they graze and eat whatever they like. Easy (even with having to make the spring rolls) and everyone ends up happy...

we love anytizers by Tyson. sometimes we put boneless buffalo wings and chicken fries in the oven and thats dinner. of course, this is just for DH and I. DD is only 5 months.

by far the easiest no cook meals are sandwiches, pb&j, tuna, cheese and/or hummus w/ lettuce and mustard (deli meat for those that eat it), etc. all of which can either be on bread, crackers, or pita!

of course, there is always that fun option of calling out for delivery ;)
