Help! Tiniest Kitchen in the World!!!

My biggest problem is my super-tiny kitchen. I have little counter space which is almost always covered in dirty/clean dishes (no dishwasher). I REALLY like to cook, and now that I work at home, I have more time to prepare, but I've gotten out of the habit of cooking much.
I'm looking for super ONE-DISH meals that are healthy and tasty! My hubby is somewhat picky, but my girls are open to anything. Besides my oven, I have a large crock pot, an electric skillet, etc. ANY suggestions are welcome!!! Hey Debbie T, I feel ya on the small kitchen thing. I'm so glad that we've moved to a place with a nice sized kitchen now, but I remember the days of the itty bitty dinky kitchen. Anyway, here is a link to a thread with crock pot recipes. http://www.workitmom.com/1276_1397_0.html
