Super Simple Gluten-Free Banana Pancakes

Even if you aren't gluten-intolerant, these pancakes will knock your socks off. Just four ingredients and ten minutes later you can have a breakfast for you and your family that is nourishing, and yet feels decadent. What more could you want in the mornings?

What you'll need:

-3/4 C. Gluten-Free Flour (This is a great one)

-4 ripe bananas

-4 eggs

-1/4 teaspoon baking soda



1) Mash up the bananas IN their peels (this will make mixing later easier)

2) Then peel the bananas and put into a bowl. Mash them up even further with a fork or mixer.

3) Mix in the rest of the ingredients.

4) Drop two tablespoons of batter on to a heated, oiled griddle or pan.Wait for a few minutes and then flip and cook all the way through.

Serve with syrup, or peanut butter for a healthier breakfast.... or both, to get the best of both worlds.
