Spinach and Cheese Puffs

When you’re trying to trick those little picky eaters, make this healthy side dish that disguises the spinach into a delicious cheesy puff pastry. If you simply don't have the time, try these easier cheese croissants.


1 package of frozen chopped spinach, drained

1/2 cup feta cheese, crumbled

1 small onion, minced

1 tablespoon olive oil

1 teaspoon dill, minced

1 clove garlic, minced

2 large eggs

1 sheet frozen puff pastry 


Mix spinach, cheese, feta, onion, olive oil, garlic and dill in a large bowl. Beat one egg. Add to mixture. Mix well. Cut puff pastry into squares. Place each square in muffin tin. Add filling and fold corners of pastry over. Brush remaining beaten egg mix on puffs. Heat in oven of 400 degrees for 25 minutes or until golden brown.
