Gluten-Free Banana Muffins

If you either want to eat healthy or have a child that suffers from allergies, these gluten-free banana muffins will make a great breakfast treat. Pack these delicious muffins for a quick snack on the go!


18 muffins


- 1/2 cup brown sugar

- 1/2 cup margarine butter

- 1 teaspoon vanilla

- 2 eggs

- 1 cup bananas, mashed

- 1 1/2 cup gluten free flour

- 2 teaspoon baking powder

- 1/4 teaspoon salt 


Mix sugar, butter and vanilla until fluffy. Add eggs (one at a time) and beat well. Combine bananas, flour, baking powder and salt. Pour 3/4 full into muffins tins. Bake 15 minutes or until golden brown.
