Pineapple Upside Down Pancakes

Add a new kind of fruit to your breakfast with these pineapple upside down pancakes! We love how simple and unique this recipe so it doesn’t interfere with our busy morning routines.

  • 1 1/2 cups flour
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 3 teaspoons baking powder
  • 1 1/3 cups milk
  • 4 eggs
  • 4 tablespoons vegetable oil
  • 1 teaspoon vanilla
  • 1 can pineapple rings



Mix flour, sugar, salt and baking powder in a large bowl. Then mix milk, eggs and oil in a separate bowl. Combine ingredients and mix well. Grease frying pan and heat over medium heat. Drop 1/4 batter on pan and place on pineapple in middle. Cook and flip until ready. Turn up heat to high to fry the pineapple.

Add these grilled pineapples to your pancake dish for even more flavor!
