Chinese-Inspired Beef Casserole

When you think of Chinese-inspired foods, you don't automatically think casserole. However, this unique dish is sure to be at hit a home or your next potluck. With just seven ingredients, this recipe is everything but long and time consuming.


-1/2 cup chopped celery

-1/2 cup chopped green onion

-1 lb. ground beef

-1/2 cup cooked rice (white or brown depending on your preference)

-1 can (10.75 oz.) of cream of chicken soup

-2 tbsp. soy sauce

-1 cup water


Preheat your oven to 350°. Cook the ground beef in a saucepan over medium heat until it starts to brown slightly, then toss in the celery and green onion. Let the vegetables saute in the oil that has cooked off of the beef until carmelized. Once the ground beef has browned fully, pour off the excess oil. Then, combine all the other ingredients in a 2½ quart casserole dish: cooked rice, cream of chicken soup, soy sauce and water. Place the dish in the oven and bake for 30-40 minutes. Top with a sprinkle of fresh chopped green onion.
