Chicken Thighs With Garlic Tomato Sauce

Spice up your chicken dinner with this quick and easy one-pot recipe for chicken thighs! Drowned in delicious garlic tomato sauce and dressed in herbs, this chicken dish will make it look like you spent hours on dinner when you totally just put this together last minute. Ingredients:

  • 4 chicken thighs, bone and skin on
  • 1 tsp. olive oil
  • 4 cloves garlic, chopped
  • 1 onion, thinly sliced
  • 20 oz. canned tomatoes, chopped
  • 1 C. chicken stock
  • 2 sprigs thyme
  • 2 Tbs. oregano

Directions:

  1. Heat oil in a pan, and pat dry the chicken thighs. Season chicken with salt and pepper on both sides and place in pan one by one. Brown each side for 5 minutes, then remove chicken from pan and set to the side.
  2. Keeping heat around low, keep only 1 Tbs. of the juices in the pan. Add in garlic and onions, cooking until translucent. Add in chicken stock and tomatoes, scraping brown bits from pan. Lower pan to a simmer and add thyme and oregano. Place chicken back in pan, cover, and let cook for 30 minutes.
