Chicken Spring Rolls with Peanut Sauce
Serves 4
2 teaspoons fresh grated ginger
1/2 cup peanut butter
1/4 cup rice vinegar
2 tablespoons soy sauce
2 tablespoos water
2 teaspoons fresh minced garlic
1/4 teaspoon cayenne pepper
1/2 cup peanuts, chopped
1 cucumber, seeded and thinly sliced
1 red bell pepper, sliced
2 carrots, grated
1 package rice-paper wrappers
3/4 pound deli-sliced chicken or turkey
2 packed cups spinach leaves
1/3 cup fresh cilantro
To make the dipping sauce, whisk together the ginger, peanut butter, vinegar, soy, water, garlic and cayenne. Set aside.
Soak one rice-paper wrapper in water for about 10 seconds to soften it, then pat it dry. Top with spinach, drizzle with sauce, then layer on chicken, bell pepper, cucumber, carrot, peanuts, and cilantro. Roll up burrito style. Repeat with additional rice-paper wrappers. Serve with more sauce for dipping.
