What do you cook when your spouse is away?

My husband is out of town at a conference for three nights and I’m solo parenting our three kids. It’s going pretty smoothly, partly because the kids are in school all day while I’m at work, partly because they get to talk to their Dad on Skype before bed, and partly because they are just pretty great kids. I like hanging out with them. They’re kooky, hilarious, and completely awesome.

One other thing that helps make the days go smoother is that I let our usual dinner routine go out the window. I usually plan pretty balanced meals (protein/vegetables/starch) but I don’t have it in me to battle with them to eat their allotted vegetables. I did do a roast chicken on the first night, but waived the veggie requirement. The second night I treated them to burgers (ketchup is a vegetable, right?), the third night I plan to make beef wraps (mmmm…cheese), and the last night I’ll probably make them hot dogs. As for me, I’m sticking with my usual protein/veggie combo in the form of a meal-sized salad because it’s easy and I feel better when I don’t go off the rails with my own eating. Besides, someone has to eat their vegetables around here.

Things will be back to usual once my husband returns home and the kids have the two of us to gang up on encourage them to eat their vegetables.

What do you cook for meals when your spouse is away? The usual, and save the leftovers for the next day? Or do you treat yourself to some take out?

  • No kids, so it’s just me when he’s gone for dinner, which is currently at least 2 nights a week. I eat horribly. Some nights I just have some crackers and call it a meal. Cooking for one is too much effort.

    As a kid, I loved it when my dad was gone because we could have nachos and other unbalanced meals. He doesn’t believe it’s dinner unless there is meat, a starchy side, and at least one vegetable. One-dish meals are very rarely acceptable to him.
