What’s for dinner?: Quick recipe links

Figuring out what to feed our small family, remembering to put the ingredients on the shopping list so that my husband can get them during his weekly shopping trip and finding time to cook is a constant struggle for me. I feel a bit like a whimp here because it’s just my husband, our four year-old daughter, and me, but the truth remains: Cooking is something that makes my work-life juggle more difficult.

So I thought we should kick off a new weekly feature here on Problem Solved called "What’s for dinner?" Monday. Every Monday we’ll post some links to quick and easy recipes from our favorite blogs and cooking sites, with the hopes of making the cooking part of your work-life juggle just a bit easier. If you have favorite easy recipes you’d like to share, please link to them in the comments, and if you write a recipe blog, please link to it as well so that we can keep expanding our collection to link to.

Here goes this week’s edition of "What’s for dinner?" Monday :

Simply Recipes : Quick beef stir-fry with bell peppers . I — along with millions of others — simply adore the recipes and photos that Elise posts on her blog and have yet to make something from there that didn’t taste great.

Picky Palate : Gourmet mac & cheese . Anything with pasta goes over well in our house and I’m always looking for ways to change it up. This is an easy and inexpensive recipe, just in time for the tumbling economy.

A Year of Crockpotting : Crockpot pizza soup . I love my crockpot but my family is tired of the same 4 things I make in it. I am going to try this recipe this week.

my recipes : Oatmeal crusted chicken tenders . These are light, quick, cheap and something my daughter may eat without endless complaining.

  • Monday - Butter Beef with either rice or egg noodles

    Tuesday - Hamburger Helper (possibly a do it yourself version, maybe out of a box version)

    Wednesday - Soup using left over butter beef

    Thursday - Popcorn chicken

  • My family and friends adore what I call the Easiest Chicken Ever, both for taste, and simplicity. I’m making it tonight, and I can’t tell you how many times I’ve been asked for this recipe, and am then forced to admit that the entire thing consists of THREE INGREDIENTS:

    Just take cutlets (or regular chicken pieces) coat with honey mustard, dredge in crushed French’s onion rings (the ones that come in a can). Bake uncovered until done. That’s it!

  • Metalia — that sounds sooo easy and like something my kiddo will try (if I cut it up in pieces and call it chicken nuggets.) What temp and for how long do you bake it?

  • Monday - Beef/chicken Mexican wraps

    Tuesday - Roasted salmon and tomatoes

    Wednesday - Hot dogs (I’m at the gym - it’s an easy meal for Matthew to make)

  • Not sure of the order of dinners but they are

    pizza with mushrooms and spinach
    kielbasa with apples and cabbage
    pork fried rice (in law’s made-yum!)
    eggs turkey bacon and toast
    pasta something
    leftovers x2

    The stir fry with beef and peppers will make it on next week’s menu!

  • Nataly- I cook the cutlets uncovered at 350 for about 20 minutes. (Give or take a few minutes, depending on the thickness of the cutlets. Just cut one open, and see if it’s pink. If so, leave it in a few minutes more. If it’s white, you’re good to go!)

    I have a TON of minimal prep/ 3-4 ingredient recipes that are perfect for hectic weeknight dinners; feel free to email me if you want more! :)
