There are two things I hate about cooking: Cutting onions and cleaning up tons of pots and pans. So here are some one-pot recipes I am putting on my list to try (and maybe we’ll do an onion-free round up soon).

My MIL introduced me to the frozen chopped onions. I actually haven’t bought them myself yet (she bought me a couple of bags the last time she was here) but they’re pretty handy! Same could be accomplished if you cut a lot of onions at once and froze them in ziploc baggies. I think you can just throw them in a recipe without thawing, in most cases.

awesome!! i am always looking for fast easy recipes because as much as i would LOVE to labor over food and cook and let things simmer, filling the house with wonderful smells… i have about 15 minutes to get food on the table, most days! and maybe as much time to clean… if i am lucky!
one of my favorite one dish meals is a fritatta - eggs and whatever veggies you have in the fridge chopped up and tossed into a pan until cooked! maybe some of those frozen onions
and some seasoning to start, then veggies to steam for a bit (let’s the water evaporate) and finally eggs! (or in my case, those egg whites that come in the carton and are yellow lol) and then when the bottom is set, toss on some cheese if you want and throw it under the broiler - done! and it looks all fancy
