What’s for dinner?: Grilled cheese recipes

I don’t know about you but after the (ongoing) marathon of holiday dinners and parties I am not sure I’ll be up for making any serious dinners for a while. My daughter has always been a fan of grilled cheese and I find that by adding a cup of soup or bowl of salad I can make it into a nice quick dinner for all of us. Here are some recipes and tips to spruce up your usual grilled cheese:

  • Every time I try to “fancy up” my husband’s World Famous Grilled Cheese sandwiches, my two boys just make fun of me. So we stick with traditional cheddar cheese on whole wheat bread with (fake) butter.

  • Hearty bread, Major Grey Mango Chutney, and a slab of Jarlsberg cheese.

    Sourdough bread, apricot jam, and brie.

    And a classic: Buttered whole wheat or multigrain bread, american cheese, and a very ripe tomato slice.
