We know it’s difficult to get your kids to eat their vegetables, but trust us they will be asking for more of these honey glazed carrots after you serve them! This simple, and healthy, four ingredient recipe will please even the pickiest of eaters by allowing the honey to bring out its natural sweetness. Pair these with a classic easy-crockpot-pesto-chicken or porkchops, or even serve them family style if you’re making pasta that night. Added bonus: this recipe could not be easier!
You will need:
- 1 bag of ready to eat baby carrots or peeled regular carrots cut into 1 ½ inch length
- 2 tablespoons honey
- 1 tablespoon butter or margarine
- A pinch of nutmeg if desired
- Parsley to add color if desired
In a two quart saucepan, boil carrots in about two cups water. Once the water is boiling, reduce the heat and cover with a lid. Drain water once the carrots are tender and return them back to the pan. Add honey and butter, stirring the mixture frequently until the butter is fully melted and the carrots are evenly coated with honey. Once ready to serve, sprinkle the nutmeg and garnish with a touch of parsley.
