The holidays may be over, but winter certainly is not! So there’s no reason not to treat yourself and your family to a delicious winter-themed treat! Trust us, happy tummies and smiling faces are what you can expect with this easy to make peppermint cupcake recipe. These cupcakes have less than ten ingredients, most of which can be found in your house, and take about 45 minutes from start to finish. Even more enticing? Your children can decorate to their heart’s content with frosting and mini candy cane pieces without you having to worry about breaking the bank.
What you’ll need:
- 1 stick of softened sweet cream butter
- ½ C of sugar
- 3 eggs
- ½ C of self raising flour
- 1 Tbs of baking powder
- 1 tsp of vanilla
- 1 C of store bought pre-made white icing
- One dozen tiny peppermint candy canes
Preheat the oven to 300 degrees Fahrenheit and line a cupcake pan with 12 cupcake liners. In a mixing bowl, add the sugar, vanilla, butter, and eggs, and mix until combined. In a separate bowl, combine the baking powder and flour; add to the egg mixture slowly and continue mixing until the batter is smooth. Fill the liners two-thirds full with batter and bake for about 20 minutes. Allow them to cool completely on a cooling rack before letting your little ones get creative. Once cooled, the only rule your kids need to follow is to spread the icing on prior to sprinkling candy cane pieces on the top. The decorating only stops when they’re finished, so have fun!
