We're having this tonight and I'm confident it'll be good. Got the idea from Moosewood.
Step one: make a pot of garlic broth. Sautee three T minced garlic in olive oil gently until golden. Don't let it brown!! Boil 8 cups of water, 2 cubes veggie stock cubes, paprika, thyme, sage. Add garlic to the broth. Simmer. Add a can of petite diced tomatoes. Simmer for a few minutes.
Step two: prepare one pack of cheese tortellinis according to package directions.
Step three: serve. Place tortellinis in individual bowls, then ladle over the broth.
