I think I just gained 10 pounds. YIKES!
My fave corn casserole recipe is this one (the thought of the sugar in the other one made me squeemish and I don't know why):
1 pkg. Jiffy corn muffin mix
1 can corn
1 can creamed corn
1 cup sour cream or plain yogurt
mix all together in a 9x13 pan. Melt one stick of butter and pour over the top. Cook until browned, depending on the oven temp...it's takes over an hour at 325 (when I'm cooking ham) and about an hour at 350 and 40 minutes at 400. Also great with chili.
