Gluten Free challenges

Gluten Free living is getting more and more attention from the media and the market-place. Yet it is still difficult, at least for me, to find some quick and easy meals that will satisfy the dietary needs of my Gluten Free hubby and the more discerning (which really means finicky) kid palate.
I've adapted many, many recipes to be GF which makes me feel pretty satisfied but by no means can I be considered an overly creative cook. I still cannot bake a loaf of GF bread that can be called food. The other basics? I'm down with those. For the more complex recipes, I tap into online resources and books. There are several wonderful blogs out there regarding the Gluten Free diet and I read many of them regularly.


I'm very interested in what others have done and in recipe swapping and ideas.

Hi - I started living Gf 5 years ago and my youngest 3 years ago. It is something that is hard to adjust to at times. But the longer you are Gf..seems like it gets easier. Please look up " The
Crockpot Lady" she does everything Gf. Know she will have things that your husband and children will like. Hope I can be helpful. Eileen
