I cannot easily cope with it when around us we see and hear everyday snobs who oppose genetically modified food and think that everyone must have organic food.
I love organic food (I myself was born and raised in a European country in which for a long time people mostly ate organic food and did not know what genetically modified food is ... these times are gone, but for a long while, this was the case) but I have the common sense to realize that this is no longer an option for so many people around the world.
One way to HELP (and cope) is to encourage and support in any way you can, scientist who look for best ways to grow cheap and nutritional food.

I have been concerned about the rising costs of food for some time now. I read the other day about some of the bigger chains limiting purchases of rice. That sort of freaked me out. It's seems unfathomable that something as seemingly simple as rice would be limited. It really has my attention and concern.
I have been watching these stories every night on the news and I have to admit I'm more concerned about the rise in food costs than anything. I have a big family and I've started watching comparative pricing for different supermarkets and shop at Sam's more often for larger items I can stock up on. I also make dishes that are more economical. I don't believe that we will suffer a food shortage here in America (at least not in the near future). We are a major agricultural nation so if it ever came down to it we probably would do what the other nations are doing and ration the exports of our food supply in order to feed our own first. I don't think that will happpen for quite some time.

I can however, understand what is going on in other nations right now that is causing the food shortages b/c we supply alot of their food rations and b/c experts say it's the over production of corn for ethanol production that is driving the cost of food up and creating massive shortages.
