I never cook ahead of time (unless you count leftovers). I adjust my meals to fit the time allotted. I can prepare a meal in 5 minutes if need be, because I don't cook meat. My key is to stock a variety of fresh, frozen, and canned stuff (organic and screened for health considerations).
I attempt to cook my meat on the weekends for the upcoming week. That way all I have to do is heat up the meats and cook a side and make salad. Saves lots of time and I'm not in the kitchen til 10PM
I make a menu, also on the weekend I'll make a big pot of sauce and or
soups and a meatloaf or 2. Also to do this with a friend is nice, then you
both have meals for those "what do I make" nights.
When I was working I would make the week day dinners lite and easy to prepare, the family liked that better as well because everyone is busy. Then prepare your bigger, meat and potato dinners on the weekends, that was helpful and enjoyed by all.
I have always made dinner either before I went to work, or after I got home depending on my shift. Soups I make a big pot and freeze to have in a couple of weeks. Lasagna I put together 2 pans and freeze one before I bake it. Then from the freezer to the oven on the the table in under 1 hour. Usually I pull out the frozen things on the week-end so I have me time
I found that cooking really large meals during the weekends, and then freezing the leftovers, I usually have to cook once-twice per week. I also rely on my slow cooker a lot.
