Light but satisfying, fresh spring rolls are an exotic addition to the lunchbox. Fill them with bits of grilled meat, shredded lettuce, and cellophane noodles for the kids; up the wow factor for yourself by adding shrimp, a sweet-and-sour chili sauce, and slivers of cucumber and radish. Allergy alert: These are easy to make gluten-free!
