Red Cabbage Fish Tacos

These light tacos combine Irish and Mexican cuisine fruitfully! Sprinkle with leaks. Top with lime juice. Ingredients:

  • 1 cod filet, sliced
  • 1 C. bread crumbs
  • 1 C. all-purpose flour
  • 1 head of red cabbage, sliced
  • 1 C. steamed white rice
  • 1 carrot, finely shredded
  • 1 leak stalk, chopped
  • 3 round flour tortillas
  • 1 lime


  1. Preheat oven to 350 degrees F. Soak cod in flour and breadcrumbs and place in a baking dish. Bake until cod has been fried.
  2. Lay tortillas flat. Spoon even amounts of rice onto tortillas, and top with cod. Add red cabbage, carrot, and leak. Garnish with lime juice.
