Lemon Cake

This simple lemon bundt cake recipe is a perfect springtime dessert. Made with pancake flour, fresh lemon and pure vanilla, this dessert is to die for.Ingredients:

  • 2 ½ C. pancake mix
  • 2/3 C. white sugar
  • ¼ C. butter, melted
  • 3 eggs
  • ¾ C. milk
  • 1 tsp. vanilla
  • 3 Tbs. grated lemon peel
  • ½ C. powdered sugar
  • 1 Tbs. lemon juice


  1. Preheat oven to 325 F. Coat the bottom of a 9x5-inch loaf pan with nonstick cooking spray and a lightly sprinkle of flour. Beat all of the cake ingredients together, except for the lemon peel. Beat on low speed for 30 seconds, and later for 2 minutes on the medium speed. Gently fold the lemon peel, into the batter.
  2. Pour batter into the pan. Bake for 45 to 50 minute. Cool for 10 minutes. Remove cake from pan onto a cooling rack. Let cake cook for about 1 hour.
  3. Mix powdered sugar and lemon juice together until smooth. Drizzle glaze over cake and serve with a lightly sprinkling of powdered sugar.
