Avocado Coleslaw

Coleslaw might not be for everyone’s taste, so add some avocado to make it more interesting. With the addition of lime juice as well, the avocado and the slaw overall will last much longer. You won’t be able to stop the family members from taking more.


- 2 avocados, diced

- 2 limes, juiced

- 1 cabbage head, shaved

- 1 cucumber, diced

- 1 fennel bulb, shaved

- 1 bunch fresh cilantro, chopped

- 1/2 red onion, shaved

- Salt and pepper to taste


Mix lime juice and avocado in a medium bowl. Add cabbage, cucumber, fennel, cilantro, and red onion. Mix well. Taste with salt and pepper. Cover. Refrigerate for at least 30 minutes before serving.
